Raspberry Buckwheat

What's your favourite breakfast? This is mine, it's easy, delicious and adaptable to the weather (can be served hot or cold). This keeps me full for hours and is packed with goodness. Next time you're not feeling inspired at breakfast, why not give this a go?!
Raspberry Buckwheat
1 cup raspberries (thawed frozen or fresh)
1/2c cooked cold buckwheat
1 tbsp ground chia seeds
Stevia to taste (if needed)
splash of water/soy milk if needed

  • cook buckwheat and cool (I usually do this the night before)
  • thaw raspberries/squish berries
  • grind chia seeds
  • combine ingredients well
  • enjoy!

This recipe works wonderfully with blueberries, mixed berries, passion fruit, mango- really anything juicy! and if you need it just add a splash of lite soy milk to pull it together. I find the texture of porridge to be too mushy, quinoa isn't mushy enough but buckwheat is perfect! I really enjoy this breakfast and hope you will too.
