Apparently this smelt good to everyone in our apartment block too. I bumped into my downstairs neighbour and she asked what it was that smelt so good and how she could cook it!
This tastes amazing, is super easy to make and ridiculously good for you. The only down side was I ate too much and upset my low fodmaps streak. Ah well, it was worth it.
Spinach Chana DalThis tastes amazing, is super easy to make and ridiculously good for you. The only down side was I ate too much and upset my low fodmaps streak. Ah well, it was worth it.
1 tsp fenugreek
thumb sized fresh ginger
thumb sized fresh turmeric
1 tbsp dried turmeric
1/2 tsp cardamon
3 tbsp cumin
3 tbsp coriander
4 bay leaves- dried
6 cloves
1 tbsp garam masala
1 tsp curry powder
3 tbsp lemon juice
stevia to taste
1/2 tsp chilli powder
4 cups soaked chana dal (overnight or at least 3 hrs) 2 cups dried
2 cups water
1 x 750g packet frozen spinach (use fresh if you can but frozen is so cheap, quick & easy)
- soak chana dal (it will double in size)
- chop ginger & turmeric
- combine chana dal, water and all spices except garam masala
- cook on low pressure for 15 mins
- simmer while adding spinach
- when tender add lemon juice & garam masala
- enjoy with rice/popadoms (serve with 1 tsp vinegar if you're me but it tastes wonderful either way)
- This keeps in the fridge and freezes well
