I hope you all had a lovely easter & got to enjoy some time off! Here are some quick & easy recipes to add to your repertoire :)
Apple & Almond Butter
Easy doesn't even cover this one...
Apple
Almond Butter
- Slice apple thinly
- Spread small amounts of almond butter on apple & enjoy!
Broccoli, Mushrooms & Sage
Small head of broccoli2 cups chopped brown mushrooms
1 tbsp chopped Fresh Sage
1tsp 'chicken' stock powder
1 spring onion
1 garlic clove
1 cup water
- chop vegetables, onion & garlic
- dry fry onion and garlic
- add broccoli & mushrooms
- add water & stock powder
- When vegetables are almost cooked stir through chopped sage
Raspberry & Banana 'Ice-cream'
2 frozen bananas2 cups frozen raspberries
1.5 cups water
- Blend all ingredients (pulse first)
- If you like it soft serve style eat straight away, if you like it harder just put it in the freezer until it takes your desired consistency- this will keep well in the freezer, just pull it out ahead of serving time so it's soft enough!
Blueberry & Banana 'Ice-cream'
2 frozen bananas2 cups frozen blueberries
1.5 cups water
- Blend all ingredients (pulse first)
- If you like it soft serve style eat straight away, if you like it harder just put it in the freezer until it takes your desired consistency- this will keep well in the freezer, just pull it out ahead of serving time so it's soft enough!

1.5 cups water

Chocolate Avocado Mousse
This one is very similar to the choc mint one I posted earlier here, but I had the camera out so why not?4 small avocados (once again- go organic, they taste SO much better)
2 tsp vanilla paste/extract whatever you like
stevia to taste- if you're going to eat it with fruit like me you really don't need much!
2 tsp cacao powder (or more if you like it really strong)
These are all really quick and easy to make- rarely do I make things that take a lot of time and effort, because I really don't have the time! (& the pressure cooker makes lengthy dishes quick!)
