I was so hungry I forgot to take a photo before I ate it! I'm sorry! It wasn't anything special to look at, just what you'd expect. Tastes wonderful though! fairly gentle flavours (I was looking for something to soothe the stomach after too much chili!) Rice noodles with Broccoli & Almonds
Serves 4Broccoli- 1 headStock powder- 3 tbspRice noodles- 2 cakesAlmonds- 1/2 cup- soak rice noodles in cold water
- crush almonds
- chop broccoli into bite sized florets
- Braise broccoli in pan w lid (minimal water) sprinkled with stock powder.
- Add almonds now if you like them chewy or last for crunchy texture
- Drain rice noodles and add to pan when broccoli is almost done
I'm not sure how this keeps, I've never tried freezing or keeping rice noodles in the fridge but they're fairly delicate so I wouldn't be too confident of the outcome- plus it's so quick to cook you don't really need to! Hope you enjoy this as much as I did! xxx
