I got cooking for a friend's BBQ the other week. Everyone likes options (especially when faced with scary new vegan foods) so I made a few different things, we ended up bringing this scramble, pumpkin & chickpea veggie burgers, 2 salads, 1 dressing & 3 desserts. We ate very well and my husband enjoyed his first BBQ as a vegan without being deprived in the slightest!
This tofu scramble as described by my other half is sweet, salty, spicy, really good, strong, has a kick of spice, salt & lots of flavour. Needless to say it went down very well.
Satay Tofu Scramble
Makes 8 serves250g (or half block of) Firm Tofu
250g Soft Tofu (not silken)
3 tbsp peanut Butter
5 tbsp soy sauce
1tsp sambal olec (chili paste)
1 tbsp lime juice
2 tsp sweetner (natvia/ 10 drops stevia)
1 tsp ginger powder
1 tbsp miso
- press tofu overnight (both)
- combine all marinade ingredients
- slice soft tofu
- marinate overnight
- chop firm tofu
- scramble marinated tofu with marinade (cook it for ages to get it the right texture!)
- separately dry fry non-marinated tofu
- combine gently
- enjoy hot or cold
Sesame, Coriander & Carrot Salad
Makes 10 serves
1kg carrots grated
2 cups chopped coriander
1/2 cup lightly toasted sesame seeds
- grate carrots
- chop coriander
- lightly toast sesame seeds in a dry pan (do not take your eyes off them!)
- combine
- enjoy!
- Keeps well in the fridge
Miso Tahini Dressing
1 part tahini1 part miso
1 part hot water
- add to jar
- combine well (I shake it until smooth)
and I decided on lemon poppy seed muffins/baby cakes using katie's recipe that you can find here.
and then for a chocolate kick some brownies! I used katie's recipe as a base but turned them into chocolate peanut butter brownies by adding some peanut butter! (1 cup to be exact) They received many compliments and were likened to reeses peanut butter cups.
They went down a treat! & the hubs was so impressed with this batch that he's having a birthday brownie instead of a cake!
