Sweet Green Soup

Firstly I want to say welcome to my new followers! I hope you get some healthy food ideas and try some of my recipes :) It always makes me smile to see those numbers go up or hear from you in comments. If there's ever anything you want to make but don't know how to make it healthy or vegan please just ask and I'll always try and help you out.
Alright- I feel like I should explain my ticker/countdown on the left sidebar. I did not binge but I feel that I have been overeating (you know, finishing the plate because it's there). Even if it is fruits and veggies it's still not what I want. This weekend has been so full of homework food simply hasn't been a priority and it has re-affirmed the portions I should be eating. So I decided to start focusing on it and counting again. Also I'm down another kg -yay!
Ok now for some goodness I've been eating. We've had a lot of rain recently and the parsley growing on our balcony went nuts! so I needed to use lots before it grew so tall it uprooted itself (it was a serious concern). Thus green soup. This soup is filling (due to the chickpeas) but it's also incredibly refreshing. I know it sounds odd, I'd never think to describe a soup as refreshing, they're usually hearty but this one has so much parsley in it that it leaves you feeling like you've done yourself some good- and it actually tastes good! 
Sweet Green Soup
(It may not look pretty but I was hungry and it tastes gorgeous!)
1 can sweet corn
2 cups chickpeas (cooked)- that's approximately a can
2 cups parsley- yes it's a LOT. Feel free to use less but it really is good for you.
1 packet frozen spinach or fresh if you have it!
Cover ingredients with stock
handful of sage

  • Cook chickpeas or defrost the ones you have in the freezer or open a can
  • Add everything to a pot and simmer for 10 mins to heat everything through
  • Blend & enjoy!
  • Keeps in the fridge for a couple of days but when I froze it it wasn't quite the same... less vibrant in colour and flavour. So best to eat it fresh.

In other news I've been considering posting intakes again to keep me on track, I just don't want to count calories again- it makes me loopy. Also I may be forced to take a little break from blogging- we're getting a new internet deal (cheaper & more downloads!) but it means we won't have internet access for a bit.. they said 2 weeks max. I'm crossing everything it's less. So I'll let you know what happens with that.
