Soba Noodle & Watercress Salad with Five Spice Tofu

This Soba Noodle Salad is delicious and was really what we wanted but as we didn't have all the ingredients needed this took it's place. Still tasted amazing and the five spice tofu is a wonderful addition. I didn't miss the things we didn't have one bit. Did I mention it's healthy but doesn't taste it?
Soba Noodle & Watercress Salad with Five Spice Tofu
Makes 2 big serves (mains)
Dressing:
1 tbsp lime juice
4 tbsp soy sauce
thumb size piece of grated ginger
1 small red (hot) chilli
2 tbsp sesame seeds
stevia to taste (5 drops?)
Salad:
1 packet of soba noodles (buckwheat)
1/2 avocado
6 cups watercress
Tofu:
2 small blocks (1/2 packet) of firm fried tofu
five spice (if you have the time make your own- its so much better!)
1 tsp 'chicken' stock powder
1 tbsp rice bran oil- just to stop it sticking

  • Cook the soba noodles
  • Chop the chilli and grate the ginger
  • Combine the dressing ingredients
  • Slice tofu thinly, coat in spices & stock powder and fry
  • Rinse noodles to cool
  • Add dressing & coat evenly
  • Chop watercress and avocado
  • Combine on the plate & enjoy!
This is always a winner. Even if people think they don't like tofu or salad. Watercress is amazingly good for you, full of flavour and has minimal calories! Even if you don't try this recipe, try watercress! Its a little spicy and can hold its own in any salad- it has attitude like rocket :)
