Red Miso Vegetable Noodle Soup

In case you can't tell I like my Asian style soups. We live walking distance from and shop at the local Asian markets so it makes sense really. You know, I think I need to give my meals more interesting names!
I go for these when I'm cold and hungry but need something that I can chew. I use chopsticks too because I find them more fun than a fork and they make the meal last longer.
Red Miso Vegetable Noodle Soup
Makes 1 big serve or 2 medium serves
2 mushrooms
1 bunch of choy sum
handful of bean sprouts
handful of bean/glass noodles
Broth:
1 tbsp red miso paste
1 tbsp soy
4 cups water (I use boiling water from the kettle to speed things up)
1 tbsp sesame oil
1/2 tsp lime juice

  • Combine broth ingredients (except sesame oil) and simmer
  • Chop veggies & add to the broth
  • Add noodles
  • Simmer for approximately 5 mins (till the noodles are cooked)
  • Add sesame oil & serve
I love this. Depending on how hungry I am this can be one meal or two, not that it matters- it's vegetables! It takes mere moments to cook and I don't think anyone could possibly stuff it up. All you have to do is taste it and make sure the balance is right- if it needs more salt/acid just adjust it to your taste. If I make this for other people I add more of everything to bump up the flavour seeing as their pallets are usually fried from junk food. Sad but true.
