I love this combination of sweet peas with the rich hearty mushrooms and juicy crunch of the beans with the salty kick and crunch of the roast edamame. Everything just works. I just chuck things together these days and hope for the best but sometimes you just know it's going to be good.
Special Stir-fried Quinoa
Makes 1 large serve1/2 cup cooked quinoa
2 cups green beans
1/2 cup frozen peas
1 cup dried shitake mushrooms
1/4 cup chopped dry roast edamame
1 tbsp soy sauce
- cook quinoa if not already done
- rehydrate mushrooms in hot water
- chop beans
- combine quinoa mushrooms, mushroom stock & soy in a wok/large pan
- cook for 3-5 mins
- add veggies
- cook until veggies are tender
- chop roast edamame
- garnish with roast edamame
- enjoy!
