Super Salad & 3 Dressings

This isn't really cooking, more like chopping and combining but I eat it so much I thought it should be up here.
Super Salad
Lettuce
Beetroot leaves
Carrot
Mushroom
Green beans
Asparagus
Celery
aka anything you have in the vegetable crisper! This is a staple for me and some other usual additions are bean shoots, peas, spinach, cucumber- whatever is in season really. 
It tastes beautiful and fresh alone but some days you want a little something extra- yesterday I couldn't decide what I wanted, so I made 3 quick dressings!
Dressings (left to right)

  • sun dried tomato & roasted garlic dijon mustard, warm water, avocado oil
  • red wine vinegar, avocado oil
  • tahini, warm water, lemon juice, avocado oil
I'm trying to cut down on my salt intake and I'm not a huge fan of pepper so I've left them out but feel free to season these dressings. Also I use a little warm water to mix in the mustard/tahini which gives the dressings a more runny consistency and lets you cut down on the oil content! My fave was the first one- it was the first time I've made it and will most certainly be doing it again! It has this creaminess I wasn't expecting- yum yum yum!

I've been doing well with my attempts to eat healthy- the past two days have been all raw fruit and veg unintentionally. My energy levels are soaring, I've been in a wonderful mood and I'm sleeping better than I have in years. I can't wait till my jeans fit comfortably again. Hope you're all full of smiles too! xxx
