So this was last night's dinner- please forgive me I forgot to take photos- it was one hell of a day.
Brown rice, 6 cups cooked
Green beans, a big handful
Carrots, 2 medium
Peas, 3 cups
(& any other veg you feel like!)
1 can Coconut milk
1 cup water
2 heaped tsp good vegan Laksa Paste

Laksa-Style Rice & Veg
Serves 6-8Brown rice, 6 cups cooked
Green beans, a big handful
Carrots, 2 medium
Peas, 3 cups
(& any other veg you feel like!)
1 can Coconut milk
1 cup water
2 heaped tsp good vegan Laksa Paste
- heat laksa paste until fragrant
- add coconut milk & combine
- add cooked rice & stir well
- add veggies & water
- when veg is as tender as you like it you're done! Enjoy xxx
Tomato/Herb Pasta Sauce
Serves 2 (huge husband size bowls)
2 heaped desert spoonfuls of good rich tomato paste
1 cup water
1 minced clove of garlic (maybe 2 of the useless white imported one?)
Fresh Basil, small handful
Greek oregano, 1/2 small handful
Normal oregano, 1/2 small handful
3 baby bay leaves
olive oil- 1 tbsp
tabasco sauce- approx. 5 drops
- heat oil
- add minced garlic
- add tomato paste & combine
- cook tomato paste out- maybe 2 mins
- add water, tabasco & bay leaves
- stir well and reduce on a low heat until you reach a thin but coating consistency
- add fresh herbs and simmer for another 2 mins, then serve!
This sauce is a great easy base, it works wonderfully over pretty much anything (veggies, lentils, beans, rice, pasta, quinoa, TVP etc) Obviously if you don't have fresh you can use dried herbs, if you want to exchange the tabasco for red wine vinegar feel free but try tabasco at least once! it's not hot I promise, it just adds something else, a bit more depth to the sauce. Also if you want to use fresh or canned tomatoes go for it, I just use paste for the texture. Hope you give this one a go- it's super quick!
